After a touchdown a team can elect to kick the extra point, but if the defense jumps offsides there could be a huge penalty… 
@MikeGarafolo: Important note: Extra point decisions can change after penalties. (e.g. a defensive penalty on a kick, offense can then go for 2 from the 1)
According to Mike Garafolo of Fox Sports, if a team jumps off the line of scrimmage, then a team can elect to go for two on the second attempt and the ball will be placed at the one yard line.
